Roasted Fingerling Potatoes

Serves 4
Ingredients
1 Lb. Fingerling Potatoes
¼ Cup Canola Oil
1 Tbsp. Chopped Fresh Rosemary
1 Tbsp. Sweet Chili
Juice of 2 Lemons
1 Tbsp. Granulated Garlic
1 Tsp. Smoked Paprika
Salt
Pepper
Equipment

Large Bowl
Baking Sheets
Spray Oil
Large Spoon
Instructions
Preheat oven to 400 degrees. Cut potatoes in half lengthwise & place into large bowl. Add into the bowl with potatoes: canola oil, granulated garlic, sweet chili, lemon juice, smoked paprika and chopped rosemary.
Toss well with a spoon to coat. Place on sprayed baking sheet or sheets in a single layer. Cook in preheated oven for about 15 minutes. When they are golden brown and fork tender remove and salt and pepper to taste.
