Buffalo N.Y.’s wing fest debuts vegetarian alternative

Buffalo, New York, home of the ‘Buffalo wing’ hosts the National Buffalo Chicken Wing Festival annually. But this year for the first time, the festival will include a vegetarian chicken alternative.
This year’s festival has 32 Buffalo wing vendors, one of which is serving up a veggie substitute instead of meat, according to the Miami Herald. Instead of chicken, Steven Binks, who is a chef and TV personality in the Buffalo area, will be serving breaded green beans in a Red Hot sauce topped with gorgonzola cheese and served with hummus dip.
Binks explained to the Buffalo News that the Red Hot and gorgonzola “typify what a Buffalo wing is. You can rebuild those flavors into everyday healthy items.”
Although Binks' goal in the green bean dish was to make a healthier option, it has made vegetarians, as well as health nuts, rejoice.
Binks described his sans-chicken recipe as having “that chicken-y wing-type feel.”
